Lemon Butter Flank Steak

1 1/2 lb. flank steak
1/4 cup chopped fresh cilantro
4 Tbsp. olive oil
4 tsp. finely shredded lemon peel
2 Tbsp. lemon juice
2 cloves garlic, minced
1/4 tsp. crushed red pepper
1 recipe Lemon Butter, below
4 cups shredded Napa Cabbage
1 cup fresh bean sprouts
2 reen onions, bias-sliced into 1-inch pieces

1. Place steak in a shallow dish. Add cilantro, half of the olive oil, the lemon peel and juice, garlic, 1/2 tsp. salt, 1/4 tsp. black pepper, and the red pepper. Turn steak to coat. Cover; chill 30 minutes to 1 1/2 hours.

2. Meanwhile, prepare Lemon Butter; set aside. In a 12-inch nonstick skillet heat remaining oil over medium heat. Remove steak from marinade; discard marinade. Cook steak 15 minutes or to desired doneness (I only cooked mine for 10 minutes), turning once. Cover; let stand 10 minutes.

3. Add vegetables to skillet. Cook and stir over medium heat 2 minutes or until crisp-tender. Season with salt and pepper. serve steak with vegetables and Lemon Butter. Makes 4 servings.

Lemon Butter: In bowl combine 3 Tbsp. softened butter; 3 Tbsp. minced lemongrass; 1/4 cup cilantro; 1 Tbsp. lemon juice; salt, pepper, and crushed red pepper to taste.

Lemon grass is not easy to find.. But I found it at the Sunflower Farmers Market across from the mall.

Tip I received from the guy in the meat department: make sure to cut the meat against the grain before cooking so that it will be tender.

Dumpling Soup (otherwise known as Won Ton Soup)

1 32-oz box mushroom or vegetable broth
1 cup water
2 tsp. grated fresh ginger
2 10-oz. pkg. frozen pork pot stickers or dumplings with sauce
2 medium carrots, peeled and cut in thin 2 inch strips
1 small bunch green onions, trimmed and diagonally sliced

1. Combine the broth, water, ginger, and seasoning packet form one package of pot stickers. Bring to boiling over high heat.
2. Add pot stickers, carrots, and most of the green onions. Returning to simmering. Reduce heat and cook, covered, for 8 to 10 minutes or until pot stickers are heated through.
3. Ladle soup into bowls. Sprinkle with remaining green onion slices. Makes 4 servings

If there is not a seasoning packet, add 2 teaspoons soy sauce and 1 teaspoon toasted sesame oil.

I added snow peas because they are my favorite

Homemade Goodness

Recipe for Homemade Bread

From the Kitchen of: Brittney Guffey

5 & 1/4th cups of Four
1/4th cup Sugar
1 Tablespoon & 1 1/2 teaspoons Rounded Yeast
2 teaspoons Salt

Mix Together

Add 1 Tablespoon & 1 1/2 teaspoons Lechithin
2 cups Hot Water (But not Scalding)

Mix in a Kitchen Aid for 10 Minutes (or a Bosch)

Grease the Pans

Put into two loaf pans and let rise for 45 minutes (Cover with a towel)

Bake at 350 degrees for 25 minutes



For half wheat bread substitute (this is the one that I made for this post)

2 1/2 cups wheat flour
2 1/2 cups white flour
& 1/2 cup and two Tablespoons Wheat gluten flour

Instead of all White Flour.















You will love it because this recipe is so easy! I used to be freaked out by yeast but it is easy to use with this recipe.

New Furniture?

I just finished painting this chest of drawers

My grandpa gave it to me as a wedding present. Or he bought it just for fun. You never know these days.

He bought it for $25 dollars at a yard sale

Now it looks like a million bucks!

I want to buy some new handles though... Any ideas on where to purchase them?
